intermittent faults are always the worst type to troubleshoot. One option is to firstly ask if you could talk to the Touareg tech directly about the problem - try to explain it directly to him and get his opinion. Then ask that when it happens next time, could you call him directly to try to troubleshoot the problem while the problem is actually happening. I did this exact thing with my RRS when the suspension started to squeek - didn't happen at the dealer as it was intermittent - so when it happened next time, called in and chatted to the tech engineer who asked me to do a few tests (basically push down on suspension with wheels turned left/right, suspension low and max etc etc) - result was he concluded some rubbers bushes needed re-oiling - was done the following Monday and its never done it since.
